Where you find every recipe and ingredient.
The sidebar is the persistent left pane in Gelato Maestro. It lists your recipes at the top and your ingredient library underneath, grouped by category. All the global commands live in its toolbar.
Every recipe you've created — and the default recipes that ship with Gelato Maestro — appears here. Click one to load it into the detail pane.
Default recipes are marked with a small lock and cannot be edited or deleted. They're meant as study material and starting templates. To make your own version, open the recipe and choose Duplicate — your copy is fully editable.
Click the + button in the sidebar toolbar. The New Recipe sheet asks for:
.gmaestro file in Finder or dragging it onto the Gelato Maestro icon — it will be added to your library.
Below the recipe list sits your ingredient library. Items are grouped by category so you don't have to scroll past everything you don't need: Dairy, Sugar, Emulsifier, Stabilizer, Fruit, Nut, Chocolate, Egg, Oil, Alcohol, Vegetable, Base, and Other. Tap a category heading to collapse or expand it.
Click any ingredient to inspect its composition, nutrition, cost and notes — see Ingredient Library.
Default ingredients are locked (their composition is curated and stays consistent across updates). When you need to change one, duplicate it and edit the copy. New ingredients you create are always editable.
Use the New ingredient command in the sidebar toolbar (or in the overflow menu on macOS). The composition editor opens — see Editing an Ingredient.
The search field at the top of the sidebar filters both recipes and ingredients together. Matching is diacritic- and case-insensitive, so searching for creme finds Crème and searching for fragola finds Fràgola.
The toolbar at the bottom (iOS / iPadOS) or in the title bar (macOS) hosts the global commands:
| Button | What it does |
|---|---|
New Recipe (+) | Opens the New Recipe sheet — name and gelato kind. |
| New Ingredient | Opens the composition editor to create a custom ingredient. |
| Statistics | Opens the Statistics window with production and financial insights. |
| Backup | Opens the Backup sheet — export data or PDF archive. |
| Settings (gear) | Opens Settings: units, mode, iCloud sync, gauges, batch freezers, prices and notifications. |
To delete a user-created recipe or ingredient:
Default recipes and default ingredients are locked and cannot be deleted.
